  • For the dressing
  • 3 ounces goat cheese crumbled and softened
  • 1/4 cup whole milk
  • 1 teaspoon lemon juice
  • 2 Tablespoons extra virgin olive oil
  • 2 Tablespoons honey
  • 1 Tablespoon water
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • For the salad
  • 5 ounces mixed baby greens
  • 2 Tablespoons fresh sweet basil leaves finely chopped
  • 1 cooked boneless skinless chicken breast cut into bite size strips
  • 1/2 cup dried cranberries
  • 1/2 cup toasted pine nuts
  • 2 Mighties® Kiwi sliced then cut slices into fourths


  1. For the goat cheese dressing:
  2. Pour whole milk and lemon juice in a bowl and let set for 5 minutes or until milk curdles.
  3. Whisk together all dressing ingredients in a small bowl until smooth.
  4. For the salad:
  5. Toss together salad greens and basil in a large bowl. Top with chicken, cranberries, pine nuts and Mighties® Kiwi. Drizzle with prepared goat cheese dressing when ready to serve.
