Minestrone Soup Recipe
A simple and hearty vegetarian Minestrone Soup Recipe

- 8 ounces cooked pasta I prefer Orecchiette
- 2 Tablespoons Olive Oil
- 2 cups carrots sliced into coins
- 2 medium zucchini sliced into coins
- 1 jar BertoliĀ® Gold Label Imported Aged Asiago Cheese Paired with Artichokes
- 36 oz vegetable broth
- 1 19 ounce can cannellini beans rinsed and drained
Heat olive oil in a large stockpot over medium heat. Add zucchini and carrots, stirring occasionally until vegetables are tender.
Add sauce and broth. Bring to a boil over high heat. Reduce heat to low and simmer covered, stirring occasional, for 20 minutes.
Stir in beans and pasta; heat through.
Serve warm with crusty Italian bread.
