Weight Watchers One-Pan Orecchiette with Sausage Recipe

  • 1/2 teaspoon coconut oil
  • 1 pound Andouille Chicken Rope Sausage I used Johnsonville, sliced into small coins
  • 1 large red onion diced
  • 1/2 teaspoon table salt
  • 3 cloves garlic minced
  • 1/8 teaspoon crushed red pepper flakes
  • 3 cups low-sodium chicken broth
  • 8 ounces orecchiette pasta
  • 2 cups chopped broccoli
  • 1/4 cup grated Parmesan cheese divided
  • 2 Tablespoons lemon juice
  • 1 cup grape tomatoes halved


  1. Warm coconut oil in a large, nonstick soup pot, over medium high heat.
  2. Add sliced chicken sausage and cook, stirring often, until warmed through (about 6 minutes). Remove sausage to a bowl (keep warm) until later.
  3. Add red onion and salt to the pot; cook, stirring often, until onion is softened.
  4. Stir in garlic and red pepper flakes; cook for 1 minute.
  5. Add broth, bring to a boil over high heat.
  6. Add pasta to the broth and cook, stirring frequently, for 8 minutes.
  7. Add the chopped broccoli and cook and additional 4 minutes, stirring occasionally.
  8. Stir in cooked sausage, 3 Tablespoons of grated Parmesan cheese and lemon juice.
  9. Garnish with halved grape tomatoes and remaining Parmesan cheese.
  10. Yields 6 1 1/2 half cup servings.
