Apple Cinnamon Cookies Recipe
A chewy fall flavored cookie full of cinnamon apples!

- 1 cup butter softened
- 1 1/4 cup packed brown sugar Imperial brand preferred
- 1/4 cup granulated sugar Imperial brand preferred
- 2 eggs
- 1 teaspoon vanilla
- 1 Tablespoon cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 1/2 cups all purpose flour
- 1 cup fuji or pink lady apples peeled, cored and diced into small pieces
Preheat oven to 350°F
In the bowl of a stand mixer, cream butter and sugars until well blended. Add in eggs and vanilla and beat on medium.
Combine the flour, cinnamon, baking soda and salt and add to the creamed mixture until full incorporated.
Turn off the mixer and fold in diced apples with a spoon or spatula.
Drop by rounded tablespoons, 2 inches apart onto silpat or parchment lined baking sheets.
Bake at 350°F for 11-13 minutes, or until golden brown. Let stand for 1 minute before removing to a wire rack to cool completely.
