I like to take a slice of whole wheat toast and top it with a quarter of a smashed California avocado (mix in a bit of salt and pepper). It should look like toast topped with some smooth guacamole. Then place a fried egg on top. Leave it a little runny if you like that. Enjoy!

I haven’t had a good avocado in so long!! NOTHING beats CA avos!

We eat avocados for breakfast almost every day…but it helps to live on a California avocado ranch and be married to the farmer! Thanks for helping to promote our wonderful California avocados!

A BLG is what we call it in my house –
Two pieces of white bread, two yummy slices of fried bacon, smashed up California Avocados with a pinch of salt, onion and lime. Fry an egg and place it on top. VOILA – A BLG sandwich. It’s truly delicious!

well this might sound somewhat odd, but I take a California Avocado and smash it include salt, pepper, a hint of lime and some garlic powder and top a waffle with that mix instead of butter.

I wish I had time to create something as this sounds like a fun little party. We do eat avocados a lot for breakfast, especially since we have given up dairy, sugar, and wheat. Avocados just add the goodness that egg dishes crave!

A quick, super flexible egg ranchero dish
2-3 eggs scrambled, splash of milk or 1/2 & 1/2 if I have some
Few tbsp of salsa, black bean salsa also works
Bit of shredded cheese if its handy
Few slices of California Avocado, on top or smashed & mixed in
Served on or with toast…if there’s bread in the house. You could even add some hot sauce or, my preference, sour cream.

Thank you for hosting such a fun contest. I created and shared the Breakfast Veggie Wrap! Hope you all will like it as much as my family does. 🙂 My family loves CA avocados, especially the kids! Yup, they certainly know the good stuff!

Third recipe I’m sharing today is the Grilled Vegetable Salad. I grill all year round and this is a beautiful salad best serve at room temperature. Enjoy.
