Oh how I wish we were neighbors. Why aren’t we neighbors? Any schools in the area need a principal? Any hospitals need a PT? We’ll move! I’ll move for this casserole. I’m sure Ben will get on board when I tell him how much I’d like to have a weekly cup of coffee with my friend Kristen. Yeah…
PS: Sounds fun — I better go buy some avocados 🙂

Amazing recipe! I can’t wait to share some avocado-y goodness! I am all about spending at least ten minutes laying in bed scrolling through Instagram before I officially wake up. It eases me into the day and helps me think about what I want for breakfast!
Amy @Very Culinary says
I get up at 5am every morning. But that stack of deliciousness would actually make it worth it!
Denise says
I am just like you with that snooze button. In fact, I have set it an extra 10 minutes before I really need to get up for the gym, just to catch up on IG. Great recipe – I am always on the look out for breakfast casseroles for breakfast. We have become regular eaters of the avocado for breakfast, especially since doing this re-calibration of our lifestyle and eating.

10 slices of bacon and then 5? So 15 all together or is it a misprint?
Kristen says
Thanks for catching that! It was an error. It should be 10 slices of pre-cooked bacon.
Annalise says
Oh my, this is exactly the Saturday morning breakfast I want to enjoy tomorrow. Yum!
Elizabeth says

The link on tastespotting for this dish is wrong – I had to do some sleuthing to find the actual page!

Beautiful. It looks delicious!
Rachel says
Could this be prepared ahead of time and then cooked in the morning?
Joan says
Thank you for sharing this easy, crowd pleasing recipe. Quick to assemble and bake, this recipe was exactly the sort that makes feeding a crowd easy and fast. I served the avocado and tomato on the side with salsa and fresh herbs. There were two pieces leftover that I wrapped and put in the fridge. I’m anxious to see if they hold up and make a quick, on-the-go weekday breakfast solution.
Lily@LittleSweetBaker says
Made it this morning for my family and in-laws, it was fabulous and easy to put together, love it! Thank you for such a great recipe, this one is a keeper X
Kristen says
Oh I’m so glad! Thanks for letting me know 🙂
Chris Gilbreth says
Made this today and it was a hit. But there was a lot of liquid in it after it baked. Any ideas how to make the hash browns and tomatoes a little dryer going in?
Jessica says
Is it possible to prep everything ahead and freeze to bake later?
Kristen says
Hi Jessica –
I’m honestly not sure. Most breakfast casseroles can be prepped ahead of time, but I’m not sure how well the avocados would freeze (would they turn brown)?
If you try it let me know, but I haven’t tried it so can’t really say. I’m sorry!
Thanks!
Kristen
