My friend Cheryl certainly likes to throw a good party. You know Cheryl from her awesome blog, TidyMom, but probably also recognize her as my partner in crime for SoupaPalooza. This spring, Cheryl has traded in her soup bowls for salad tongs and is hosting a one of a kind event – The Salad Social!
I love a good salad almost as much as I love a big bowl of soup, so I can’t wait to see all the recipes that will be linked up to her salad party. If you have a recipe to share, make sure to head over to Cheryl’s blog and check out the details, including some great prizes.
The salad I’m sharing isn’t your typical lettuce salad, but it is so darn good. My sister-in-law shared this recipe with me at a barbecue over the weekend and I couldn’t get over how awesome it was. In fact, I came home from her house and started a batch of my own.
I’ve never been a huge fan of potato salad or coleslaw – and you know, those are just about the most popular salads brought to summer events. It was so nice to be at a party and see something other than the traditional served… this Robust Bell Pepper Salad truly stole the show!
Do you have a favorite salad? Remember to share it over at TidyMom starting next week, during her fun Salad Social – I can’t wait to see what you bring!
Recipe: Robust Bell Pepper Salad
Ingredients
- 1 Red Bell Pepper coarsely chopped
- 2 Yellow Bell Peppers coarsely chopped
- 2 cups cherry tomatoes halved
- 1 16 ounce bottle Robust Italian Salad Dressing
Instructions
- Place chopped bell peppers and cherry tomatoes in a medium bowl.
- Pour Italian salad dressing over the pepper / tomato mixture.
- Cover bowl and place in the refrigerator overnight, for best results. Can be served within a 3-4 hours as well, but peppers will not be as tender and flavorful.
PS – I’m sharing a Creamy Black Bean and Corn Salsa recipe over at the Simple Bites blog, using my favorite Bush’s Black Beans. Make sure to head on over and check it out!
Okay so not fair. These are both dishes I could consume on my own for dinner.
This salad looks delicious! I’ll definitely be checking out Tidy Mom- I’m always on the hunt for a good new salad recipe.
This looks so light and refreshing! Headed over to Tidy Mom to check out the others 🙂

Oh..that rose flower table cloth as background is soooo…pretty!! Love this light and summery salad.
I’ve been on a salad kick recently, mixing up whatever I have from our CSA box. This is just lovely!
I can almost taste (and smell) this one! Roasted veggies are always so appetizing and colorful too. Totally trying this one soon.
My family hates peppers, which is sad, because I LOVE them! This salad seems like a perfect thing to bring to a picnic 🙂
Looks super delicious. What a great idea for a salad, especially for people who don’t like the green stuff. And, it’s a perfect side for any kind of grilled meat. I’ll definitely add it to the plans for this summer.
This is what I call eating with your eyes! It looks so fresh and delicious Kristen!
Very pretty salad…bet it would be delicious as a topping for a perfect avocado half!
Love the presentation in the glasses!
So simple, but so incredibly beautiful – definitely a great recipe for easy summer entertaining.
This is the first time I have heard about bell pepper salad and I am sure a lot of people would want to give this a try too.. Thank you anyway!
Yum, I will for sure be making this! Thanks Kristen!
Wow! Very artful salad and looks amazing on these photos. No words to say more. I’ll be making this on mini parfait glass tonight. Thanks Kristen!
I often tend to overload my salad anyway – adding way more stuff than lettuce, so I kind of like just skipping it all together!
So fresh and pretty!
That looks amazing, Kristen! Love the vibrant colors and flavors.
look at the pop of colour on this little number!! I think the next family BBQ will be seeing this salad 🙂 ~ yum
