I think one of the challenges I have with food blogging, especially today, is the fact that it’s such a profession now. Every picture you see out there is a gorgeous display of incredible styling and photography skill. In fact, I was going through my archives from 11 years ago trying to see if there were any photos I could salvage that were considered “good” then, and felt a bit embarrassed by them. In today’s standards, they were pretty terrible!
I love food photography and styling so much, but sometimes I just want to share what I’m having for dinner like in the early days of blogging. Lately I haven’t been up for the fuss, so instead of sharing not professionally looking styled pictures of recipes I love, I just haven’t been sharing anything at all. And that’s a shame. Some of my most simple, family friendly, staple kind of recipes come after the “studio” is shut down and I’m simply cooking for my family.
Last night as I was making what I call “fast food” Baked Tilapia for dinner, I decided I’d grab the last few minutes of sunlight and take a picture for you so I could share the recipe on my blog today. It’s nothing fancy… a picture taken from my seat at the table, but hopefully it’s good enough to make you want to try it.
With school back in session, I rely now more than ever on quick recipes, and fish and shrimp are quick! This Baked Tilapia with Lime Juice is one of those recipes that serves me so well in a pinch. Plus, it’s so good for you and delicious, you’ll want to make it all the time.

Baked Tilapia with Lime
Ingredients
- 1.5 pound tilapia filets
- 1-2 Tablespoons Wildtree Rancher Steak Rub sprinkle generously or any similar garlic/sea salt blend
- 2 tablespoons butter sliced into thin pats
- Zest and Juice of 1 lime
Instructions
- Preheat oven to 375°F
- Line baking sheet with foil or spray with non-stick cooking spray
- Plate tilapia on baking sheet and sprinkle generously with seasoning
- Top each filet with 1 pat of butter
- Sprinkle with lime zest and drizzle lime juice over the top of each filet
- Bake for 12-15 minutes until tender and flaky

I’ve made this 3 times now but with flounder. It is absolutely the BEST FISH I’ve ever eaten, and I’m not a seafood person. I just bought flounder on a whim for sumthing different but I’ve gone back and bought it 2 more times. In fact, I’m getting ready to do this again tonight. I LOVE IT!
