I just thought I would post here some proof that we do eat things other than cakes, cookies and baked goods. Seafood is one of my favorite things to eat. I love Fridays during Lent because we are obligated to not eat meat, which means that seafood is the food of choice.
One of my favorite recipes so far this Lenten season has been this delicious Shrimp Scampi recipe. It is so easy to put together and if you love garlic and butter, you’ll love eating this. My 5 year old, who said he did not like shrimp, ended up eating 3 big portions after he tasted it.
Shrimp Scampi
Shrimp Scampi is perfect for a nice home cooked meal for you and your family to enjoy.
Ingredients
- 1 lb raw shrimp peeled and deveined
- 3/4 cup white wine
- 1/4 cup light olive oil
- 1/2 cup unsalted butter
- 2 tablespoons blue bonnet margarine
- 3 tablespoons minced garlic
- 1/4 teaspoon paprika
- 1/2 tablespoon parsley flakes
- grated parmesan cheese to top
Instructions
- Heat wine, olive oil, butter, margarine, and garlic in a large skillet on medium heat until it just starts to boil.
- Then add paprika and parsley flakes, stir in and immediately add shrimp.
- Cook for about 4 or 5 minutes or until shrimp turns pink.
Notes
Don't overcook. Spoon shrimp onto plate with some of the cooking sauce and top liberally with parmesan

The colors really jump out at you in this photo, it’s nice! I love big shrimp but don’t can’t eat them that often here – I would probably substitute the paprika for fat hot pepper flakes (though I can imagine your child wouldn’t be a big fan at 5!).

I have seafood every Friday! Originally it was because we had fish at my Grandma’s Fridays because we weren’t supposed to eat meat, but gradually it just morphed into always eating seafood on Fridays regardless of the time of year or where we were.

Our favorite way to eat shrimp is in a low fat alfredo. You may have to double the recipe as this is usually enough to cover a 1/2lb of shrimp and pasta, with some broccoli mixed in.
in a blender mix 4 oz (1/2 a brick we always use the reduced fat) of cream cheese with one cup of milk (I use skim and it tastes fine) and 3 Tbsp parm. cheese and a couple cloves of minced garlic. Blend until it is mixed and then heat on medium while your pasta cooks (recipe says 10 minutes but I have cooked it loner and it is fine).
It does get fairly thick as it sits so I always add a little pasta water to thin it. Hope you like.

Everything tastes better with butter. This looks great! For some reason, I’ve been having such a hard time with no-meat Fridays. Doing shrimp and oysters on the grill tonight, recipe from Get Your Grill On. Will definitely try this pasta on our son – he thinks he doesn’t like shrimp either.
