History shows that the name pound cake originated from the fact that the original pound cake recipes contained one pound each of butter, sugar, flour and eggs. I am not convinced that is the real reason. I think the real meaning behind the name pound cake comes from the fact that you will certainly pack on the pounds if you eat a cake with that much butter and sugar in it. I think that those pounds are well worth it when you have something as fabulous as a pound cake. There is nothing quite like a real dense and moist pound cake to satisfy a sweet tooth. With a real pound cake, each bite seriously melts in your mouth. Mmmmmm…
As much as I love real pound cake, I’m not looking to add on a bunch of weight right now. I wish I had the dilemma of trying to gain weight… unfortunately, gaining weight is really not something that is difficult for me to do. Since I am kind of trying to lose some of this baby fat, I decided that making a real pound cake probably wasn’t in my best interest. Instead, I fell for the picture of a Golden Lemon Pound cake that was featured in a Land O’ Lakes advertisement in this months issue of Gourmet magazine.
This cake is by no means light… it still is jammed full of calories, but the one slice I had was well worth it. I gave part of the cake away to my neighbors across the street, part of the cake served as dessert for a meal with our friends last night, part of the cake was eaten for breakfast this morning by my husband, and the last few pieces will be gone before the day is up (I hope!).

Land O’ Lakes Golden Lemon Pound Cake
Lemon Pound Cake
Ingredients
CAKE
- 2 cups sugar
- 1 cup butter softened
- 4 eggs
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup buttermilk
- 1 tablespoon freshly grated lemon peel
- 1 tablespoon lemon juice
GLAZE INGREDIENTS
- 1 1/4 cups powdered sugar
- 2 teaspoons lemon juice
- 1 -2 tablespoon milk
Instructions
- Heat oven to 325 degrees F. Combine sugar and butter in large bowl. Beat at medium speed until creamy. Continue beating, adding eggs one at a time, until well mixed. Reduce speed to low; gradually add flour, baking powder, baking soda and salt alternately with buttermilk until well mixed. Stir in lemon peel and 1 tablespoon lemon juice.
- Spread batter into greased and floured 12-cup Bundt pan. Bake for 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely.
Glaze:
- Stir together powdered sugar, 2 teaspoons lemon juice and enough milk for desired glazing consistency in small bowl. Drizzle over cooled cake.

When I was much younger and didn’t think about fat and calories, I used to eat pounds of pound cake! Sara Lee, as I recall. But those days are gone, I’m afraid. However…I must say that this recipe is calling to me. You see, I just bought some strawberries on sale, and the combination….well….You know how that goes….

Kristen, when I was trying to get rid of the baby fat. I was told to eat everything I wanted but not in huge portions. Eat 4 to 5 times a day in smaller amounts. And of course walk, exercise, swim, whatever fits in your lifestyle. I used to put Soeren in his buggy and power walk through the park. It really helped. I still keep this way of thinking in my head. I do not try to resist on food. I just take smaller portions.

Oh my that first photo with the icing dripping down the sides of the cake is just divine. All I can say is can I please have a slice? The beauty of the pound cake is that because it is so dense, a little slice is enough to satisfy.

Thanks for your kind words over on countrygirl dearest friend. Here is the down side of blogging- pounds. Unless you find a raw veggie blog, all the best recipes are fattening, and of course I want to try them all. Pretty soon my whole family will look like Violet(in Willy Wonka) after her gum and she turned big, and round!
