One of the places on my travel bucket list is Italy…
In fact, I don’t have a huge desire for a lot of international travel, but Italy is one place I truly can’t wait to visit. The vineyards, villas, cafes, food and overall Italian lifestyle has always intrigued me. In my mind I picture Italy as being more laid back, less hustle and bustle than here. The Italian culture seems to be one where you appreciate…savor…indulge in just the right ways…and enjoy life through all your senses. In the busy season of life I’m in right now, the Italian lifestyle sounds like a welcome escape.
I won’t be going to Italy anytime soon, unfortunately, but I can practice the art of the Italian lifestyle right here in my own home through preparing simple food with fresh, flavorful ingredients (like this minestrone soup recipe), celebrating family and friends, and enjoying leisurely time with loved ones. In addition to the Caramelized Onion Stuffed Portabello Mushroom recipe I shared as part of my dinner party, I also created a Minestrone Soup Recipe that is abundant with vegetables and full of flavor. It’s one of those warm and comforting soups that is a perfect start to a meal, dinner party or not.
The best thing about this soup is how easy it is to make. Using Bertoli® Gold Label Imported Aged Asiago Cheese Paired with Artichokes as a base with vegetable broth, the most effort required is chopping up your desired vegetables. When you focus on recipes that are easy to create for dinner parties, that gives you more time to be with your guests and soak up the food and friendships surrounding you.

Minestrone Soup Recipe
Ingredients
- 8 ounces cooked pasta I prefer Orecchiette
- 2 Tablespoons Olive Oil
- 2 cups carrots sliced into coins
- 2 medium zucchini sliced into coins
- 1 jar Bertoli® Gold Label Imported Aged Asiago Cheese Paired with Artichokes
- 36 oz vegetable broth
- 1 19 ounce can cannellini beans rinsed and drained
Instructions
- Heat olive oil in a large stockpot over medium heat. Add zucchini and carrots, stirring occasionally until vegetables are tender.
- Add sauce and broth. Bring to a boil over high heat. Reduce heat to low and simmer covered, stirring occasional, for 20 minutes.
- Stir in beans and pasta; heat through.
- Serve warm with crusty Italian bread.
