Friends, this year has been so hard, hasn’t it? It seems not a week goes by where there isn’t some unthinkable tragedy. From the devastating hurricanes in Texas and Puerto Rico, massive wildfires in California, to the horrible mass shootings in Las Vegas and now Texas, my heart is breaking over and over again. It’s hard to not feel overwhelmed and sad all the time.
Our family has been doing more volunteer work than normal, making hygiene kits for hurricane victims, participating in diaper drives, donating money and more. There are so many needs all over and often it’s hard to feel like we are making a difference at all.
One thing I’ve been inspired to do is to simply try to reach out to friends and family more and spread some kindness. That’s where #GiveAFriendACookie comes in. A group of bloggers and I have teamed together with Imperial Sugar to share cookies with friends around us, just to provide a little boost of happiness. I’ve had some neighbors going through some relatively hard times, so I decided to share some Apple Cinnamon cookies with them. A little bit of kindness given to others can go a long ways, even kindness in the form of a cookie. You should give it a try!
If you are looking for that perfect, sip with your cider or dunk into your hot chocolate, fall cookie, these chewy Apple Cinnamon Cookies are it. The cinnamon flavor is just right, and with the use of mostly brown sugar, these cookies have a subtle caramel flavor that pairs perfectly with the cinnamon apples.
Apple Cinnamon Cookies Recipe
Ingredients
- 1 cup butter softened
- 1 1/4 cup packed brown sugar Imperial brand preferred
- 1/4 cup granulated sugar Imperial brand preferred
- 2 eggs
- 1 teaspoon vanilla
- 1 Tablespoon cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 1/2 cups all purpose flour
- 1 cup fuji or pink lady apples peeled, cored and diced into small pieces
Instructions
- Preheat oven to 350°F
- In the bowl of a stand mixer, cream butter and sugars until well blended. Add in eggs and vanilla and beat on medium.
- Combine the flour, cinnamon, baking soda and salt and add to the creamed mixture until full incorporated.
- Turn off the mixer and fold in diced apples with a spoon or spatula.
- Drop by rounded tablespoons, 2 inches apart onto silpat or parchment lined baking sheets.
- Bake at 350°F for 11-13 minutes, or until golden brown. Let stand for 1 minute before removing to a wire rack to cool completely.
