As part of my 2012 focus word to “connect” more with others, I have decided to shoo away my Reluctant Entertainer and open up my home to others more often. Occasions big and small, I’m happier and my home is a happier place when we share it with others.
Budget is often something that we have to take into consideration when we entertain, so when Sam’s Club challenged me to create a menu on a budget for a get together, I jumped at the chance. My assigned budget was $60.00. I decided for a New Year type gathering (or even a Super Bowl party) snacks and appetizers were the way to go. Into my cart went:
- A package of large shrimp (For Panko Crusted Shrimp..recipe below) $11.98
- A bag of Italian Meatballs (For Game Day Meatballs) $13.98
- A package of Chicken Wings (For Oven Baked Chicken Wings) $13.98
- A large bag of Pretzel Crisps $5.98
- A box of Clementines $5.96
- A box of Red Grapes $7.98
- I picked up a Diet Coke fountain drink as a special treat for me $.89
- Grand Total: $59.65
With a few pantry staples to create the recipes, I think this makes for a quick and inexpensive entertaining menu, don’t you? I always appreciate when hosts set out fresh fruit to snack on. If it is there, I’m more likely to to munch on that versus chips, which my waistline appreciates! Sam’s Club has some of the best fresh fruit around, in my opinion, all season long!
When you think about entertaining in 2012, remember, you don’t have to break the budget to open your home to others. Shop smart, think simple, and shoo away your “Reluctant Entertainer“. Open your home and people will be thankful for your hospitality.

Now for the recipe…
Recipe: Oven Baked Panko Crusted Shrimp
Ingredients
- 20 large shrimp peeled, deveined with tails intact
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon cracked black pepper
- 1/2 teaspoon Zatarain's Original Creole Seasoning
- 1 egg
- 1 cup Panko bread crumbs
- 3 Tablespoons olive oil divided
Instructions
- Preheat oven to 450° F. Drizzle a baking sheet with 2 Tablespoons olive oil.
- Place shrimp in a large bowl and sprinkle with Kosher salt and black pepper. Toss.
- Beat the egg and pour over the shrimp. Stir until the shrimp is well coated.
- On a large plate, combine the Panko bread crumbs with creole seasoning. Mix well.
- Coat each shrimp with the bread crumb mixture. Place on the baking sheet.
- Drizzle the shrimp with 1 Tablespoon olive oil and bake for 8 minutes or until golden brown.

I love buying our brisket at Sams Club. Paul Deen has an awesome brisket recipe that works great! The brisket feeds a bunch of people for around $20 and all you have to do is add a couple side dishes. Since others always want to bring something, take them up on the offer to bring something too!

My tip is to buy meat on sale & in bulk. I usually know about a month ahead of time (or more) when I’m going to entertain, and watching for meat sales is the biggest way I save. I freeze the meat when I purchase it and thaw it a day or so before the party!

Buy ingredients in bulk and turn them into something special at home. Example, I just made a double batch of candied nuts from a recipe from Smitten Kitchen called Sugar and Spiced Candied Nuts. Delicious! Better than anything I can buy in the store and much cheaper too!

Entertaining earlier in the day means guests are more apt to just want snacks vs a meal. This translates to smaller portions which can mean preparing a variety of foods using less costly ingredients or serving fewer items, but with more costly ingredients (so the overall cost is still low). This gives hosts a fun way to try new “fancy” recipes without breaking the bank.

The first thing I do is make sure to not plan my menu until I see the ad circulars for the week. I plan my meal and appetizers based on the sales and of course what is available at my local Sam’s Club. For dessert I love to make homemade ice-cream and serve a fruit compote with it. It’s impressive to my guests but is actually inexpensive! I buy frozen fruit for the compote and the basic ingredients for a simple ice-cream is doable on a budget! If it’s a sit-down meal I’m not shy about purchasing rotisserie chickens from the store and simple doctoring them up with spices, herbs and stuffing them with lemons. I then slowly reheat them in the oven so that the flavors can infuse. And of course you have to shop for the season. In the winter sticking with things like root vegetables, pears, etc. makes sense. It’s really all about not getting an idea stuck in your head before you see what’s on sale and inexpensive at the time!

I like to make pasta for a crowd. It’s inexpensive, so you can afford to throw in a few quality ingredients to make it stretch AND make it fabulous. My favorite is a huge batch of spaghetti with a meaty slow-cooked tomato sauce.

I’ve been a choir director for almost 25 years, and as the choir has grown, so have the parties! We usually have 60-80 people at a choir party now. One of our best ideas is to set a simple menu and then ask members to bring the completed dishes. For example, roast pork, rice pilaf and Greek salad. Those who aren’t cooking can bring a dessert or a beverage.
When no one wants to cook, we have a Pizza Potluck. After church, everyone calls in for pizza…picks it up and takes it to the party place. The host provides salad. And it’s BYOB. We always have a great time, it takes very little effort and the cost is low…especially when we have coupons!

To entertain on a budget, I throw a themed potluck! Everyone sticks to the same budget, and is encouraged to be as frugal as possible, using any home-grown produce they can, to utilize coupons and clearances, to cook from their freezer and pantry, to buy in bulk then stretch and ‘re-purpose’ those ingredients no matter what they are. What seems to be limitations in fact encourages creativity, turning the event into a collective experiment and game.
My take on this is almost always desserts, and a kitchenaid mixer would certainly make these baking projects easier!

Best tip for feeding a crowd cheap is mexican food! Everyone love is and it’s easy to make, beans and rice are so cheap… a roast in the crockpot covered with salsa and mexican spices will turn into devine shredded beef for burros or bowls. Add margaritas and fun and you have a great party. 🙂

the way I do entertaining on a budget is by using inexpensive staples like eggs, potatoes, pasta… these also lend themselves to make-ahead dishes, which frees you up to enjoy your guests. And I totally agree that if someone asks what they can bring, you need to take them up on it!!!

My tip for entertaining would be to recycle decorations. Buy decorations that will work for many occasions that you can add a little this or that to and make it suitable for the occasion and then you can afford to spend more on the food for the party. There is a big difference in food quality on some items and some you can get away with less expensive brands. If you haven’t tried it before the party don’t try it FOR the party. I like to make up a super big batch of meatballs I have made using ground beef, ground pork and ground turkey. I make up at least two different sauces, 1 B B Q and the other sweet and sour. I can then serve them on a platter with pretty tooth picks or serve with steamed rice. To make the meatball mixture go farther I add a box or two, depending on the number of meatballs I am making I add a box of a seasoned stuffing mix, such as stove top stuffing.

Great article! I have a huge party every year with over 100 guests, and my budget is usually $2 a person. I make a huge taco bar with ground beef and pulled grilled chicken. I make salsa homemade instead of buying it which saves a ton of money. Guests can choose from tacos, taco salad, and nachos and gussy them up however they want. I even put out a corn and black bean salad as another protein for vegetarians. Everyone can fix their plates how they want and it’s easy on my time and my wallet. Keep posting!

One way to save is to make your own ‘trays’. Cut up the veggies Oneself arrange them on a tray or nice platter. Same thing with meat and cheese trays.

I try to look for recipes with primary ingredients that I already have (flour, sugar, milk, butter, eggs, etc.) and build from there. I find that h’orderves go a long way because they are portioned out and people tend to be polite about grabbing whole plates full of one item.

My tip is to have the guests RSVP so you have a good idea of how much food is needed -that way you don’t cook too much and nothing will go to waste. You can also plan the meal around what is on sale that week at the grocery store to save money. I also serve inexpensive drinks to save money – lemonade, iced tea and coffee are all good choices.

My tip is to have a group of friends plan an international theme menu together. We use a different country each time. The person acting as hostess prepares the main dish decided upon by the group. Then each individual is given a recipe for a side dish or dessert, keeping to the theme. There are lots of ethnic foods available at Sam’s Club, which makes shopping for an international dinner menu. Hostesses rotate each month and, in fact, can work as a team to minimize the cost.

My best tip is don’t be afraid to “rework” leftovers into a new dish. This saves a grocery trip and may be a new fan favorite in the future. i.e. cut leftover sweet potato rounds in half to look like footballs and roll in cinnamon sugar for an appetizer. June

I think you could serve a nice homemade veggie soup for a budget conscious meal. Pair it with a fresh, crusty loaf of bread, a simple salad perhaps and an inexpensive bottle of wine. For dessert you could make a fruit cobbler/crisp or just serve ice cream. I think the pleasure of sharing a simple meal with good friends is the best kind of entertaining.

How do I entertain people on low budget? I am a vegetarian so But obviously my menu will be vegetarian but I make it in a way that it involves everyone to participate. Like last time I had fondue (Both cheese and chocolate) on menu as appetizer and it was pretty entertaining and involving. For main course I made pasta, roasted vegetables, mashed potatoes and a salad. For dessert I made black forest trifle and the party was amazing and affordable with satisfying menu. I even prepared goody bags filled with homemade delicacies like scones, hot chocolate sticks, barks etc…which helped me financially and my guests were happy to enjoy that in their breakfast the next day!

My tip is to keep things simple! People remember that you had them over, not what you fed them. My favorite entertaining treat is a recipe I got from my cousin. Halve large cherry tomatoes and cielinge, small (about 1 inch diameter) mozzarrella balls I get at Trader Joe’s. Cut the mozzarella balls in half if you want to make it stretch even more. Drizzle with good olive oil and balsamic vinegar, sprinkle with coarse sea salt and ground pepper to taste. Serve with small slices of French bread (also good for soaking up olive oil). Another variation is to thread a mozzarrella ball and a cherry tomato on toothpicks.

Use budget stretching recipes. Do you know how many people a flank steak will feed if it’s sliced thinly and served on a salad?
Use uncomplicated recipes, like comfort food. I make speghetti, but use shredded chicken in lieu of beef (Brown your chicken the deglaze pan with a little wine. Finish cooking the chicken in the wine, then shred. Add the whole mess to your fav marinara).

Appetizers or small bites is the best way to entertain on a budget. One of my favorites is beef sticks. Buy a london broil steak (cheap) from the grocery store and ask the butcher to slice it 1/8 to 1/4 inch thick into strips. Combine 2Tbsp sugar, 1/4 cup soy sauce, 2 Tbsp oil, spring onions and garlic, mixing thoroughly. You can add water if you need to stretch the marinade to cover all the meat. Marinate the meat strips overnight and then thread them through bamboo skewers. Broil until meat is cooked and serve. (You can make a dipping sauce if you like, but the flavor is really good without.)

I have several tips for entertaining, but my favorite one is “remember it’s only an event, not the pivotal moment of your life. Let people help, and don’t think about the things you couldn’t do; nobody knows you meant to make new curtains for the living room/buy new towels for the guest room/create a french bistro tray of petite pastries/etc.” About 30 minutes before people arrive, light a candle in each public restroom and any outdoor seating spaces. It creates a warm welcome and encourages people to wander rather than huddle in one tiny space.

Buying bulk size snacks and goodies at Sam’s Club is the best tip for economical entertaining. Sodas too! For more upscale entertaining, their frozen snacks are good choice. Also, when guests ask if they can bring something, say YES! Make it something small, a 2 liter of soda or a bag of chips or whatever, but let them contribute if they offer.

I like to entertain friends by having a dessert and coffee bar in the evening – it doesn’t entail the expense that a meal would but it’s still fun and lets me show off my mad baking skills. Brew plain coffee (unflavored), have bowls of chocolate chips, mildly sweetened whipped cream, packets of sugar and sugar substitute, a couple of sweet liqueurs; and then have plates of different kinds of homemade cookies, arrange an assortment of fresh fruit in a bowl, put out a serving board (or plate) with a chunk of a soft mild ripened cheese, a firm piquant cheese, and a salty or sweet cheese along with some water crackers and a few nuts, and finally put something spectacular (cheesecake, bundt cake, layer cake, etc) on a pedestal with plenty of plates, cups, napkins, knives, forks and spoons so everyone can sample and enjoy.

Use everyday ingredient in a different form – last bits of sandwich bread can be repurposed as spicy bread crumbs that jazz up plain-jane chicken strips. Or marinate slivers of that common chicken breast onto skewers with bites with veggies & fruit. And you can make anything look more glamorous when presented well. You’d be amazed how many new compliments I get for my good-ole recipes I serve over & over again when I use cloth-lined basket or festive tray with multiple tiers!

I like to make one item that will “Wow” everyone and then serve with simple salads and other items that use mostly staples I always have in the pantry. Everyone loves to try something new and fun which also helps with converstions and then if the rest is good but simple everyone is satisfied but has a memorable time.
