Awhile back, I wrote about my first efforts at making homemade rigatoni pasta. I was pretty proud of my kitchen accomplishment and have since made several different types of noodles using my KitchenAid Mixer Pasta Extruder Attachment.

Making homemade pasta is one of those “magic” kitchen moments to me. It is amazing how with a couple of simple ingredients (flour, eggs, salt, water) you can create something so useful and so delicious! Last week on the Simple Bites blog, I wrote a post about making homemade pasta without using a pasta maker. You absolutely can make homemade pasta without a fancy attachment, but using a pasta press makes creating homemade pasta an absolute breeze.

    Lobster ravioli for sure!!! With a light cream sauce it’s the best. I attempted making homemade pasta a few weeks ago and really enjoyed myself. You can taste the difference.

    My friend’s mom in high school used to make homemade ravioli’s. They were amazing. She passed away after we graduated and I never got her recipe. I did get the recipe for the sauce though!

    My favorite pasta dish would definitely have to be chicken fettucini alfredo! I love the creamy sauce with the thin noodles and seasoned chicken! It’s the best 🙂

    I am assuming rice noodles don’t count. In which case…. Noodles, not spaghetti but noodles like a rigatoni or penne, with a meat and mushroom sauce. Lots of mushrooms.

    Spaghetti with lemon –
    Saute one clove of garlic cut in 2 (or less) on med low heat till lightly golden, then remove. Grate zest of one lemon into evoo and then squeeze juice of the lemon into evoo. Let cook over medium a few minutes (this sauce cooks while pasta is cooking), then add some chopped parsley just before tossing the pasta in the evoo. Salt, pepper, yum.

    I love, love, love ALFREDO! of any kind, chicken, shrimp, cajun, you name it and I will love it! Add so veggies or sun dried tomatoes and it is even better!

    My favourite pasta dish is the one my mother used to make for Christmas. She’d simmer her sauce, often with a pork hock in it, for up to 5 days. On Christmas day she’d add Italian sausage, kielbasa, pepperoni and meatballs and let it simmer for several hours more. It was dark and acidic and rich… Wonderful!

    This is impossible! I have many, many favorite pasta dishes; it’s my go to meal of choice & there’s always something available, in either frig or pantry, to use for sauce. Pasta with olive oil and garlic is my favorite when I need a super easy, fast & /or comforting dish. Lasagna with butternut squash is a new discovery that I can’t get enough of. Linguini with white clam sauce is my favorite because my husband made it for me during our courtship. I keep pesto in the freezer for another favorite pasta meal – I could go on and on but my mac and cheese is getting cold.

    I love every type of pasta. I make a mean lasagna or fresh pesto. But the only pasta I really crave is spaghetti with butter and Parmesan. With my pasta maker I’ll make whole grain noodles with the garlic built in.

    Where to begin….One of my all time favorites is Pappardelle with Bolognese sauce. I love making this wide pasta….all cut by hand, no two pieces being exactly the same. The way that this pasta hugs the bolognese sauce is a perfect marriage. Time consuming, but if you enjoy cooking the reward of seeing the smiles on your guests face make it all worth while. Although..my Kitchen Aid mixer feel very lonely lately….I think he needs a companion. lol

    Another perfect pasta dish is a nice orrechiette with a wild mushroom sauce….smothered onions, and black pepper. Add a tablespoon or two of butter to the final dish right before serving and ….viola! Porcini and cremini seem to work well together, but use whatever looks fresh. Mmmmmmmmmmmmm

    I make this awesome pasta salad with chopped spinach, tomatoes, cucumber, red onion, lots of feta cheese and a olive oil/balsamic/agave nectar/salt & pepper dressing. It’s best with rotini pasta!

    as a huge fan of anything spicy, my favorite pasta dish might have to be freshly-made angel hair with an arrabiata sauce. although a close second would be homemade tortellini tossed with cremini mushrooms + a white wine/thyme sauce. who am i kidding – i love pasta in any form!

    My favorite is one of my one that I make all the time. I’ve never used fresh pasta in it and would love to give it a try. Brown hamburger, drain, add it to cooked macaroni (elbow, penne, shells). Add a jar of tomato sauce (I make my own each summer) and any veggies you might like (corn seems to be the favorite around here, but my tomato sauce has zucchini, carrots, peppers, etc.). Heat through and there you have it. When I was working out of town and my husband was at home, I would make a huge pot of this and he would live off it for a week. He was always happy to see me come home to cook something else – he doesn’t cook!

    I learned how to make potato gnocchi in Italy with an 80 year old woman who taught me the old school way…no measuring, no machines….just feeling and seeing the texture. The most amazing gnocchi I have ever had and still make. They are extremely light, and the fresh tomato sauce gets in all of the tiny crevasses. I am making myself hungry trying to win this attachment.

    My childrens favorite ….(by far) is a fresh linguini with aglio e olio. Fresh garlic, olive oil…..crushed red pepper and a bit of basil. It makes the whole house smell scrumptious and it is a quick weeknight meal….and easy to make for some unexpected company.

    Another is the infamous linguini with clam sauce. Red and/or white. Both are staples in my book. Although my boyfriend (a foodie like me) makes the most intense white version. The aroma from the garlic and he only uses the freshest clams…lots of them.

    My husband’s grandmother makes a dish fondly termed by the family as “chicken and noodles”. You put mashed potatoes on your plate, top with corn, and then add homemade pasta doused in gravy, with fried chicken served along side it. Yum!

    My absolute favorite pasta dish would have to be my dad’s signature pasta which we call ziti-corbelli (The woman who originally made it for him had the last name corbelli). It’s a penne pasta dish with garlic, spicy cherry peppers, shrimp, olive oil and parmesan cheese. We’ve done all kinds of variations on it, but the cherry peppers are always the star. They bring this delicious spicy zesty heat. Everyone we’ve ever made it for (and we’ve made it for MANY) have loved it! I would love to make the dish with fresh, homemade pasta. That’d be a completely original variation.

    Doesn’t have a name … but when I lived in Korea, you could get this strange pasta dish served in a baggie from sidewalk vendors. Very tender over-sized macaroni noodles soaked in this crazy hot garlicky sauce. Was sort of Sriracha-like, but this was about ten years before Sriracha hit the shelves. Anyway, they’d cook up huge penitentiary-sized cauldrons of the stuff, and when you ordered it, the cook would put a baggie on his hand, reach into the pot and grab a handful of noodles, then turn the bag inside-out and hand you a bag o’ goodness which you’d eat with chop sticks as you walked away. I don’t miss a lot about living in Korea, but the sidewalk carts are on the list.

    My favorite pasta recipe is the one where I finally got my 8 year old to eat something green! Together we shopped and made what he affectionately calls “Basil Pesto Pasta”. I think he has developed a slight addiction. Using the food processor, we blend walnuts, basil, olive oil, garlic, parmesan-reggiano, salt and pepper and toss with wheat pasta. He loves it so much that I have to keep it in the fridge for quick fixin’. I knew that he wouldn’t go for the traditional chick-peas so we used walnuts. This kid doesn’t even eat a hamburger so when he loved this simple recipe, I was thrilled! Pasta is the greatest, most versatile dish. You can throw in anything and make a terrific dinner. I would love to teach them how to make fresh pasta.

    My favorite pasta (and dish) is oriechette with flash sauteed garlic, then pulled off the heat and tossed with a “salad” made of salted diced tomatoes, thinly sliced red onions, chiffonade basil, and gorgonzola cheese. MMMM.

    I’m quite happy with any sort mac and cheese. My favorite is to add lots and lot and lots and lots of minced garlic and cut up bacon. YUM!

    I love pasta. My favorite depends on what kind of mood I’m in, but my go to is rigatoni with butter and a little red sauce with grated parmesan cheese.

    Past al forno. A delicious baked pasta with ricotta, red sauce and ziti. baked and served almost like lasagna. Delicious and simple.

    Pastitsa. I lovely Greek pasta dish that I recently learned how to make. Although my boyfriend tells me that I need this special Greek pasta to make it. Its almost like a large bucatini. It is a time consuming dish, but defiantly worth the effort. Layers of pasta, meat, tomato sauce, topped with a bechemel sauce and cheese. LOVE IT!

    My favorite to date (which is always changing) is Chicken & Pepper Pasta Bake. I absolutely love that. I’m also a sucker for traditional spaghetti. 🙂

    Angel hair pasta with alfredo sauce is my absolute favorite.. I know it’s typically with fettucine, but I’m weird and don’t really care for fettucine noodles 🙂

    I made a fettucini alfredo with lobster meat in it. It was to die for. So creamy. I did cut the amount of pecorino roman in it though. That can be overpowering with the lobster.

    Orzo pasta salad. It has roasted zucchini, eggplant, asparagus, feta cheese, olive oil and lemon juice. Tons of lemon juice. Excellent for a cookout or summer lunch

    Wow! I have long wanted the extruder attachment. I have the pasta rollers and the meat grinder and sausage stuffer and…ok you can see I love my attachments. Favorite pasta? Buccatini all’ Amatriciana.

    Favorite pasta dish? It’s a tie between my mom’s rigatoni w/ homemade meatballs & sauce and an amazing angel hair pasta with avocado cream sauce. Sadly, my mom lives in another state, and the Sf restaurant that used to serve the angel hair pasta has changed owners/chefs and no longer serves it!

    The dish I love to bring to barbecues is Oriental Coleslaw made with Ramen noodles. My kids love it!
