<p>You see, a house we have loved for the past 12 years recently went on the market. It&#8217;s a <a href="http://instagram.com/p/Xp-HG9IjV2/" target="_blank">gorgeous little 1936 farmhouse</a> with land and character and all kinds of wonderful features. The best part is, it&#8217;s still in town&#8230;just a few short blocks from where we live now. It&#8217;s one of those rare, best of both world scenarios. An old, charming house with land, still within just a short drive to Target and Starbucks and still with neighbors nearby. That&#8217;s my kind of living!</p>
<p>The thing is, the house is old&#8230; it has small bedrooms, a smaller kitchen, tiny closets&#8230; like you&#8217;d expect a 1936 farmhouse to have. But, we live in a very spacious 6 year old house right now. Moving to something like this would be a HUGE adjustment in lifestyle for our family. It would mean downsizing on stuff&#8230; simplifying our lives and getting rid of all the excess. The benefit though is what we&#8217;d lose for space on the inside, we&#8217;d gain 10xs on the outside, and something about that truly appeals to me. Gardens and outdoor movies on the lawn and pickup football games&#8230; tree houses and hide and seek and outdoor entertaining with white lights and long covered tables&#8230; it&#8217;s such a dream of ours. <p>I&#8217;ve had a love affair with cheesecake practically my whole life, but, would you believe this is my first time ever making cheesecake? It is my absolute favorite dessert, hands down, but for some reason I&#8217;ve always left the cheesecake making up to everyone else.</p>
<p>I should have known that once I actually made cheesecake for the first time, it&#8217;d be a dangerous thing. And of course, in making cheesecake, I knew if I turned to the Philadelphia Cream Cheese, who has been making America’s favorite cream cheese since 1872, I would be thrilled with my results. Now that I know how easy these <a href="http://www.kraftbrands.com/philly/recipes/Pages/Recipe-Detail.aspx?recipeId=143464" target="_blank">Philadelphia Cheesecake Minis</a> are, I won&#8217;t likely be stopped!</p>

It’s a platform for creativity that offers women a place to share their real recipes, real conversations and real dreams throughout the entire year.</p>

To start, Kraft Foods has announced its Real Women of Philadelphia contest called “Delicious Dream Trips” – a contest designed for the Real Women of Philadelphia community to submit their recipe and video of their own region-inspired dish for a chance to win one of <strong>THREE  separate dream trips to Italy, France or Greece</strong>. <p>When I think about traveling to France or Italy, I think of sitting outside at little cafe&#8217;s, drinking coffee or wine and eating the most delicious breads and pastries. When I think about pastries and bread and Philadelphia Cream Cheese, I think about one of my favorite, fruit muffin recipes with cream cheese as one of the ingredients. It&#8217;s not a cream cheese filled muffin, but instead a rich, indulgent muffin with cream cheese included in the batter. The cream cheese makes the difference between an ordinary muffin and these muffins.</p>

Blend until smooth. </li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Add eggs, one at a time, beating until well incorporated.</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Slowly add melted butter and milk, blending for just a few seconds. </li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Add the flour mixture, one cup at a time, and continue mixing until all ingredients are just incorporated (do not over mix).</li><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">With a spoon, fold in blueberries.</li><li id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">Pour an equal amount of batter into each lined muffin cup, filling about 3/4 full. </li><li id="zlrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">Bake for 30 minutes or until golden brown and toothpick inserted into the center comes out clean.</li><li id="zlrecipe-instruction-10" class="instruction" itemprop="recipeInstructions">(Note - I have a picky kid who will not eat blueberry muffins if the blueberries are on top. I simply halve the batter and add blueberries to one half. It seems like such a long time ago, looking back. I remember specific moments with Jacob that I don&#8217;t remember with my three girls. There&#8217;s the first time he fell asleep in his high chair with a mouth and face full of food. My awe and surprise at the first time his chubby little hands reached out for a toy hanging on his infant carrier. My heart melted in an instant the first time his little voice repeated back the &#8220;I love you sweet baby&#8221; that I&#8217;d say to him every night as I put him down to sleep. He is my first, and as much as I do love my girls, Jacob will always have an extra special place in my heart because of that.</p>
<p style="text-align: left;">My dear blogging friend, <a href="http://www.twopeasandtheirpod.com/" target="_blank">Maria</a>, and her husband Josh, are getting ready to welcome their first baby into their &#8220;pod&#8221;. A sweet little boy. I am so excited for Maria to experience all the firsts that a mom gets to experience. I won&#8217;t go on about the eye opening firsts that I remember as a new mom, but I will tell Maria that she is in for a joyous and exciting and sometimes challenging ride. Being a parent is something I feel so blessed to do (although if you would ask me on most days, I&#8217;m ready to pull my hair out because of the kids typically).</p>
<p style="text-align: left;">Maria &#8211; take lots of pictures, treasure the moments, and enjoy being a mama to your sweet new bundle. Congrats to you and <del>Walter Dan</del> Josh. From our family to yours, much love and happiness. I can&#8217;t wait to meet him!</p>

<p><strong>Recipe: Oven-baked Apples</strong></p>
<ul>
<li>4 tart apples, such as Fuji or Jonagold</li>
<li>½ cup brown sugar</li>
<li>4 Tablespoons butter</li>
<li>2 teaspoons ground cinnamon</li>
</ul>
<ol>
<li>Preheat oven to 350°F.</li>
<li>Scoop out the core from top of the apple, leaving a well. Do not cut all the way through.</li>
<li>Stuff each apple with 2 Tablespoons brown sugar and 1 Tablespoon butter.</li>
<li>Place in a shallow baking dish and sprinkle with cinnamon.</li>
<li>Bake in preheated oven for 15 minutes, until apples are tender.</li>

<li>1 ripe avocado, diced</li>
<li>1/2 Teaspoon Kosher salt</li>
<li>1 10oz can diced tomatoes with green chilies, drained</li>
</ul>

<li>In a medium mixing bowl, combine light cream cheese and diced avocado. Blend until smooth.</li>
<li>Add Kosher salt and tomatoes with green chilies. Stir with a spoon until well incorporated. Serve cold with fresh vegetables or pita chips.</li>

<h3><strong>Recipe: Special Stuffed Mushrooms</strong></h3>

<li> 16 ounce container whole fresh mushrooms (12-16 large mushrooms)</li>
<li> 1 tablespoon vegetable oil</li>
<li> 2 tablespoons minced garlic</li>
<li> 1 (8 ounce) package cream cheese, softened</li>
<li> 1/4 cup shredded Mozzarella cheese</li>
<li> 1/4 teaspoon ground black pepper</li>
<li> 1/4 teaspoon onion powder</li>
<li> 1/4 teaspoon chili powder</li>
</ul>
<ol>
<li> Preheat oven to 350 degrees F. Spray  a baking sheet with cooking spray. Clean mushrooms thoroughly under warm water.</li>
<li>Carefully break off stems.  Chop stems extremely fine.</li>
<li> Heat oil in a large skillet over medium heat. Add  garlic and chopped mushroom stems to the skillet. Fry until soft, 2-3 minutes.</li>
<li> In a separate bowl, add cream cheese, Mozarella cheese, black pepper, onion powder and chili powder. Add chopped garlic and chopped mushroom stems, stirring together until well blended.</li>
<li>Using a little spoon,  fill each mushroom cap with a generous amount of stuffing. Arrange the  mushroom caps on prepared cookie sheet.</li>
<li> Bake for 20 minutes in the preheated oven. Serve warm.</li>

<p>OK – that is totally untrue. I love baked goods and the holiday season is pretty much my favorite time of the year because there seems to be total acceptance of all day cookie eating. In the summer if you walk outside with a cookie in your hand at breakfast time, other mom’s on the block might give you a strange look and judge the kind of parent you are. However, during the holidays? You walk outside with a cookie at any time of day and people flock to you asking for one. It’s the holidays! Cookies, cakes, candy are celebrated all day long!</p>
<p>There does come a time for balance though. We can’t merely survive on cookies alone. Every once in awhile, it is probably a good idea to throw the occasional apple or carrot into the mix just so your body doesn’t go into shock when you initiate your annual “I’m giving up sweets” resolution on January 1st.</p>
<p>I&#8217;m headed to a holiday party this weekend and am going to give my friends the opportunity to munch on some apples, grapes and strawberries. Oh &#8211; did I mention I&#8217;m bringing this fabulous Brown Sugar fruit dip along with the fruit tray? I think if I brought something too healthy, like plain fresh fruit, to the holiday party, my friends would revolt.</p>

2 1/2 Tablespoons vanilla<br />

<li>Using an electric mixer, mix the softened cream cheese for about 2 minutes on medium speed</li>
<li>Add the brown sugar, vanilla and cinnamon and continue to mix until ingredients are full incorporated</li>

<p>Food photography can be tricky. Sometimes, you have to try different angles to get the right shot. A photographer is always willing to do whatever it takes to make a photo interesting, even if that means taking a taste of the food&#8230; I like to call that &#8220;styling&#8221;.</p>
<p>In the name of creating something truly interesting, sometimes you may have to take several tastes.</p>

<p>And what if after all that hard work, you don&#8217;t get the shot you were looking for? You&#8217;ll just have to start over. Darn. Such a sacrifice, but all in the name of a trying to get that perfect shot!</p>

<p style="text-align: left;"><em>My friend Julianne has been spoiling us with this cheesecake for several years now. It is an absolute favorite&#8230; I don&#8217;t even attempt to make it anymore because I know I just can&#8217;t make it as good as she does! </em></p>
<p style="text-align: left;"><a href="http://allrecipes.com//Recipe/philadelphia-pumpkin-swirl-cheesecake/Detail.aspx" target="_blank"><strong>Recipe: Philadelphia Pumpkin Swirl Cheesecake</strong></a> from Philadelphia Cream Cheese</p>
<p style="text-align: left;"><em>Julianne makes a traditional graham cracker butter crust instead of the ginger snap crust the original recipe calls for.</em></p>
<ul>
<li>25     												     nabisco ginger snaps, crushed 												  		( 1 1/2 cups)</li>
<li> 1/2 cup   												     finely chopped Planters pecans</li>
<li> 1/4 cup   												      butter, melted</li>
<li> 32  ounces   												      Philadelphia Cream cheese, softened</li>
<li> 1  cup   												      sugar, divided</li>
<li> 1  teaspoon   												      vanilla</li>
<li> 4     												      eggs</li>
<li> 1  cup   												      canned pumpkin</li>
<li> 1  teaspoon   												      ground cinnamon</li>
<li> 1/4 teaspoon   												      ground nutmeg</li>
</ul>
<ol>
<li>PREHEAT oven to 325°F.</li>
<li>Mix ginger snaps crumbs,pecans and butter; press firmly onto bottom and 1 inch up side of 9-inch springform pan.</li>
<li>BEAT cream cheese, 3/4 cup of sugar and the vanilla  with electric mixer until well blended. Add eggs one at a time, mixing  on low speed after each additional just until blended. Remove 1 1/2 cups  of batter; place in small bowl.</li>
<li>Stir remaining 1/4 cup of sugar, the pumpkin and  spices into remaining batter.  Spoon half of the pumpkin batter into  crust;  top with spoonfuls of the reserved plain batter. Repeat layers.   Cut through batters with knife several times for a marble effect.</li>
<li>BAKE 55 minutes or until center is almost set.  Cool  completely.  Refrigerate 4 hours or overnight.  Cut into 16 slices.   Store leftover cheesecake in refrigerator.</li>

<p>School starts in two weeks from today. <a href="http://www.flickr.com/photos/dineanddish/4833483942/in/set-72157622991834959/" target="_blank">Jacob</a> is so ready to go back to school and is it bad if I say that I am really ready for him to go back to school? <a href="http://www.flickr.com/photos/dineanddish/4832728841/in/set-72157622991834959/" target="_blank">Kelly</a> will be in school all day (last year it was just half day Kindergarten) and I&#8217;m really not ready for her to be gone all day. She is a better mom than I am and is a huge help with the girls around the house. She has a patience level with <a href="http://www.flickr.com/photos/dineanddish/4833305272/in/set-72157622991834959/" target="_blank">Ella</a> that I just don&#8217;t seem to have all the time.</p>
<p>We had a big long list of things we wanted to do this summer, and unfortunately, that big long list still has a lot of things not marked off. I feel like I need to soak up these next two weeks and cram as much summer fun as I can into it.</p>
<p>I am feeling the same way about the fresh berries of summer. Summer is almost over, so I feel like I need to hoard and buy up all the berries I can and make all those recipes I haven&#8217;t had the chance to get to yet this summer. The May/June 2010 issue of <a href="http://www.pauladeenmagazine.com/" target="_blank">Cooking with Paula Deen</a> has some great berry recipes in it. (Incidentally,  this is the first issue of this magazine I have ever read and it has some great recipes. Is it always this good, or is this just a particularly good issue?)</p>
<p>If you are trying to cram the last of the summer berries into your escaping summer, this Raspberry Parfait recipe is a great one to try. Refreshing, rich and delicious, not to mention beautiful, you can eat it and savor the final days of summer just a little bit longer.</p>
<p><a href="http://www.pauladeenmagazine.com/" target="_blank"><strong>Raspberry Parfaits (from the May/June 2010 Issue of Cooking with Paula Deen Magazine)</strong></a></p>
<p>3 pints fresh raspberries, divided</p>
<p>½ cup sugar, divided</p>
<p>1 3-ounce package cream cheese, softened</p>
<p>2 cups heavy whipping cream</p>
<p>1 cup sour cream</p>
<p>1 teaspoon vanilla extract</p>
<p>Fresh raspberries for garnish, optional</p>
<p>In a medium saucepan, combine 2 pints raspberries and ¼ cup sugar.  Cook over medium heat, stirring frequently for 8 minutes or until raspberries have softened. Press mixture through a fine-mesh sieve into  a small bowl, discarding solids. Cover raspberry sauce, and chill  thoroughly.</p>
<p>In a medium bowl, beat cream cheese and remaining ¼ cup sugar at  medium speed with a mixer until creamy. Add cream, and beat until soft  peaks form. Fold in sour cream and vanilla.</p>
<p>Layer cream mixture, raspberry sauce, and remaining 1 pint fresh  strawberries in four parfait glasses. Garnish with fresh raspberries.  Makes four servings.</p>
