Mornings around our house are usually mass chaos. No matter what I do to try to be organized the night before, mornings don’t seem to change.
In fact, we have a little celebration in the car on the way to school on those rare days where I didn’t have to turn into “raging maniac mom” to get everyone in gear. I’ll say, those little celebrations don’t happen too often. That’s not something I’m necessarily proud of.
So, would you judge me if I told you that sometimes to ease my guilt for yelling, I let my kids have cookies for breakfast? OK, there has been a time or two where those cookies were Girl Scout Cookies, but for the most part, cookies for breakfast around our house consist of the oatmeal banana breakfast variety. I love these cookies because they are easy to make and they are fairly nutritious. When raging maniac mom spends her morning, ahem, yelling using her outside voice, inside, saying yes to cookies for breakfast seems to erase all that.
Say yes to cookies for breakfast and bring joy back to your mornings…for a moment, anyway.

Love this. I have done granola breakfast cookies but I love the idea of banana in them. I too get crazy in the morning…the bus comes at seven. You have to be crazy to gey everyone up and out the door by then!

I have all those ingredients in my house right now. Maybe ill make them tomorrow morning or this weekend. They look really good and seem like they are pretty healthy.

“Raging maniac mom” – I think I’m going to have to borrow that title. I can’t tell you how good it feels to know that I’m not the only one who has lots of mornings like that. Like you, I’m not proud of it, but it helps to know I’m not alone. =) I often make a batch of muffins or scones that we can eat over several days, but I’m going to have to add breakfast cookies into the rotation.
Crystal @ Crystal's Cozy Kitchen says
My son’s going to be so happy when he gets to eat cookies for breakfast ;).
Joanne says
My mom was totally that maniac in the mornings also and, if it makes you feel any better, I turned out okay!
And I didn’t even get any breakfast cookies! I should probably make up for lost time with a batch 🙂
Aggie says
Oh yea, I’m that mom on most mornings. Fun times. I always feel better once the car is in drive and we are on our way…
These breakfast cookies are awesome! I think they’d make a great after school cookie too!

Caroline @ chocolate & carrots says
I know what you mean about chaos. Before we had Liam, everything was hunky-dory and now we’re late to everything and running around like mad people. I don’t even want to know what it’s going to be like when he starts his terrible twos. Haha! Anyway. The point I’m trying to make is that these cookies are just perfect. Perfect for us crazies and will start the day off right. 🙂
Kristen says
🙂 Babies change everything, right? Glad we can be crazy together!
Caroline @ chocolate & carrots says
Me too! 😀 They’re totally worth all the craziness.

hah Mornings are pretty crazy here with two little ones and that doesn’t even involve getting them ready for school yet! (Oy vey!) Cookies for breakfast are a wonderful idea..my son would love these. Im always looking for different options to feed him..now that he knows what he likes, the little monkey is getting picky & saying no to what I give him sometimes…however, he never says no to cookies..so smart! 🙂
Kristen says
These are absolutely delicious, plus they are super easy to eat, with no mess!

Meghan says
any ideas for substitutions for peanut butter?? I am allergic to the stuff. 🙂
Kristen says
Hi Meghan –
I think you could use sunbutter or even Biscoff cookie butter. Is there a product of peanut butter consistency that you can have? I would suggest trying one of those as a substitution.
Stephanie @ Eat. Drink. Love. says
Cookies for breakfast?! Yes, please!
Gerry @ Foodness Gracious says
Mornings are tough, I was stressing out today trying to get both of mine in the car and on the road before our allotted time runs out 🙂 It doesn’t help when the two year old takes off his shoes and socks at EVERY chance he gets…gahhhh!

A magic solution for easing the tension would be joyous – particularly on friday mornings when we do a huge pack up, leave London and bomb down the M4 for 80 miles to deposit the ‘blue one’ at nursery. Love the idea even if the car gets redecorated in the process.
angela @ another bite please says
lol glad that i am not the only one that mornings end up CRAZY…love the idea of breakfast cookie…i am sure anything with the word cookie in my boys will eat up!

I made these today, and 25 minutes was a little too long in my oven 🙁 The bottoms burned, but I was able to get the tops off to taste and will be making these again with shorter bake time. Thank you for sharing the recipe.

these are so delicious, thanks for the recipe!
i substituted the honey for some applesauce, and the rice krispies for rice chex. it adds a bit more crunch! also chocolate chips add just the right amount of sweet to these cookies.

I have made these delicious cookies before! I omitted the honey and use 1/3 c of Vi Shape protein powder, makes them even more nutritious .
