Girl Scout Cookie Fudge Recipe using Caramel Delights

This post is for all the moms across the country who have drawers, cabinets and freezers full of Girl Scout Cookies. Yes, you love Girl Scout Cookies, but that isn’t why you have a zillion and one boxes of them filling up your house. It is possibly because you received reminder email after reminder email from your cookie leader that the sale date is coming to a close. When the final email comes through, you look lovingly at your little girl scout and realize that you failed to have her rock her cookie sale skills to anyone. Not even grandma and grandpa. Therefore, so she can still get the beloved “Cookie Patch”, you buy all the required boxes of cookies… all for her happy heart and a $2 patch.

With four kids, I’ve discovered a lot of the little details of life are falling through the cracks. Things like cookie sales, canned good collections and spelling bee studying aren’t getting done. I can’t keep up!

 

So, Santa… if you’re reading, I’ve been a really good girl this year and I’d love nothing more than more time in the day. Think you can swing it? I know a lot of other people would appreciate that too!

Girl Scout Cookie Fudge Recipe from Dine & Dish

In the meantime, one of my time saving tips for the holiday is to take some shortcuts where shortcuts can be taken. For example, if you have a zillion and ten Girl Scout Cookies in your pantry, learn how to use them in recipes to simplify your holiday baking. This fudge recipe was quick, easy and took some Girl Scout Cookies off my hands. I could have easily switched the type of cookie out for any of the Girl Scout Cookies available, but thought I’d start getting rid of my favorite (aka most tempted by) Caramel Delights.

What are some of your best time saving tips for this busy time of year?

Girl Scout Cookie Fudge
 
A quick and tasty fudge recipe, utilizing any flavor of Girl Scout Cookies your heart desires!
Ingredients
  • 12 ounces high quality milk chocolate chips
  • 1 14 ounce can sweetened condensed milk
  • 10 Girl Scout Cookies (any flavor), divided and coarsely chopped
  • 1 Tablespoon vanilla
  • 1 Tablespoon butter, softened (for the foil)
Instructions
  1. Line an 8 inch square pan with foil, with ends of foil extending over sides. Lightly butter foil.
  2. In a small saucepan over medium low heat, melt the milk chocolate and sweetened condensed milk. Stir continuously.
  3. Once melted, remove from heat and stir in vanilla and 8 of the coarsely chopped Girl Scout cookies.
  4. Spread into prepared pan. Top with remaining chopped Girl Scout Cookies.
  5. Refrigerate for 2 hours.
  6. Use foil handles to lift fudge from the pan. Remove foil and cut into 1 x 1 inch square pieces.

    That fudge looks amazing! I would have to say the best time saver for me is saying no. The less obligations I have, the more likely I am to keep up with my schedule! :)

    Girl Scout Cookie season doesn’t even start until January here. It seems cruel to have it coincide with the holidays. Still, I’d eat your fudge. Now, about those extra hours in the day, Santa…

    I dream of more time in a day. 5 minutes even, although I would love an extra 10 hours. I asked Santa for the same thing so *fingers crossed* we get what we asked for. I HAD extra time in my day when my 2 year old napped in the afternoon. My 4 year old would read, color, or watch a movie and I would get some things done. Well yesterday my husband took the 4 year old on an errand and I was going to bake cookies when the voice of my 2 year old was no longer via the monitor but much clearer and getting louder. She happily ran into the kitchen announcing her resignation of nap time. She scared me and then I realized she had climbed out of her crib for the very first time and was extremely proud of herself. So there goes my free time….
    Girl scout cookies aren’t even being sold yet and I am ok with that, so many Christmas cookies in the house right now that I am getting ready to ship to family and a couple friends. But I will save this in mind when I do see them being sold!

    Yes, yes and yes. I love everything about this post. Some nights around 9 pm, when it’s just finally getting calmed down, I wish that I could just click “insert” and add a few more hours into the day.

    I love girl scout cookies but we rarely have boxes upon boxes lying around… then again I don’t have a brownie or girl scout in the house as of yet. Are there even brownies anymore and I don’t mean the food? At least I know I’ll be in good company when things fall through the cracks because to me you’re a super mom and doing a fantastic job :)

    These look completely amazing! And I don’t know how you do it with 4! I have two and am just EXHAUSTED and scrapping for time. But someday (in like 20 years), I am sure there will be plenty of it :)
