Soup-a-Palooza Link Up and Giveaways

Roasted Corn Soup

Cheryl from TidyMom and I have been anxiously awaiting this day…Soup-a-Palooza is finally here and we want to invite you to share some of your favorite soup recipes with us!

The soup recipe I chose to make for Soup-a-Palooza came from the Tobasco website. I adapted it it quite a bit and really love the end result. The addition of Bush’s Black Beans, topped with Westminster Oyster Crackers and served along side a slice of Pillsbury Simply Rustic French Bread, this meal was as filling as it was comforting on a cold winters day.     I dont have a website to post it on- but I gave this to you before- but I wanted to officially post for the contest!
    Here is a REALLY yummy White chili soup recipe I started with (at the bottom)- but then I added the following ingredients-
    ½ block of cream cheese
    1 small sweet red & orange pepper chopped (along with the yellow pepper). (You can get a …bag of all three colored peppers at sams club)
    I also added 1 can of Cannellini Beans
    And instead of all that pepper- I just used a couple dashes of black pepper and a couple of dashes of cayenne (as one of the reviews said it was too hot w/the amt stated).
    I also served it w/more Pepper Jack Cheese, Tortilla chips & diced tomatoes
    WHITE CHICKEN CHILI RECIPE
    • 12 Servings
    • Prep: 30 min. Cook: 3 hours
    Ingredients
    • 3 cans (15-1/2 ounces each) great northern beans, rinsed and drained
    • 3 cups cubed cooked chicken breast
    • 1 jar (15 ounces) Alfredo sauce
    • 2 cups Progresso ® Chicken Broth
    • 1 to 2 cans (4 ounces each) chopped green chilies
    • 1-1/2 cups frozen gold and white corn
    • 1 cup (4 ounces) shredded Monterey Jack cheese
    • 1 cup (4 ounces) shredded pepper Jack cheese
    • 1 cup sour cream
    • 1 small sweet yellow pepper, chopped
    • 1 small onion, chopped
    • 3 garlic cloves, minced
    • 1 tablespoon ground cumin
    • 1-1/2 teaspoons white pepper
    • 1 to 1-1/2 teaspoons cayenne pepper
    Directions
    • In a 5- or 6-qt. slow cooker, combine the first 15 ingredients. Cover and cook on low for 3-4 hours or until heated though, stirring once. Serve with salsa verde and cilantro if desired. Yield: 12 servings (1 cup each).

    I don’t have a website either, so here is mine. It is a favorite at our house and only takes about 30 minutes to make.
    Broccoli Cheese Soup
    3 tablespoons butter
    3 tablespoons flour
    3 cups milk
    salt
    pepper
    8 ounces Velveeta cheese
    1/4 cup white wine
    1 bunch fresh broccoli, cooked and chopped

    Melt butter and add flour to make a light roux. Add milk, salt and pepper. Cook until scalded, but do not boil. Add cheese and wine and stir until cheese melts. Add broccoli. Will keep in refrigerator one week.
