Quaker Amazing Heart Giveaway {Recipe: Applesauce Oatmeal Muffins}

Quaker was such a great part of my childhood… in fact, if I were to sit down and think back to an image or logo that was most regular in our home growing up, it would be the Quaker Oats guy. Whether it was a hot bowl of oatmeal in the morning, some homemade oatmeal cookies in the afternoon, or simply the Quaker Oats carton being used as a drum during playtime, Quaker has been a part of my life for as long as I can remember.

February is the month for love, and with Quaker that means starting with our hearts… as in heart healthy. February is American Heart Month and Quaker is celebrating by donating $1.00 to the American Heart Association for each current Facebook fan and every new person who “likes” the Quaker Facebook Page during the month of February (up to $250,000). Recipe: Applesauce Oatmeal Streusel Muffins (from Quaker.com)

Topping:

  • 1/4  cup Quaker® Oats (quick or old fashioned, uncooked)
  • 1  tablespoon firmly packed brown sugar
  • 1  tablespoon margarine or butter, melted
  • 1/8  teaspoon ground cinnamon

Muffins:

  • 1-1/2  cups Quaker® Oats (quick or old fashioned, uncooked)
  • 1-1/4  cups all-purpose flour
  • 1  teaspoon baking powder
  • 3/4  teaspoon baking soda
  • 3/4  teaspoon ground cinnamon
  • 1  cup unsweetened applesauce
  • 1/2  cup fat-free milk
  • 1/2  cup firmly packed brown sugar
  • 3  tablespoons vegetable oil
  • 1  egg white, lightly beaten

Heat oven to 400°F. Line twelve medium muffin cups with paper baking cups or spray bottoms only with cooking spray.

For topping, combine the first four ingredients — oats, brown sugar, butter and cinnamon — in small bowl; mix well. Set aside.

For muffins, combine oats, flour, baking powder, baking soda and cinnamon in large bowl; mix well. In medium bowl, combine applesauce, milk, sugar, oil and egg white; blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.)

Fill muffin cups almost full. Sprinkle with reserved topping, patting gently.

Bake 20 to 22 minutes or until deep golden brown. Cool muffins in pan on wire rack 5 minutes. Remove from pan. Serve warm.

    I now am able to get more sleep thus skipping the Cortisol effect.
    Using this recipe for muffins I can also skip breakfast and had two of these with my morning coffed and it amounts to about the same.
    I use Splenda/Brown sugar combo and sometimes use whole oat groats rather than quick or regular oats. Quaker’s groats are very fresh and full of what every body need.

    I, too, grew up with Quaker Oatmeal. We had it for breakfast almost every morning and still remember my Mom sending us off to school with her famous last words, “It will stick to your ribs!”. In addition she always added it to her meatloaf and now so do I. For a healthy snack I also make granola for my family.

    Have you ever thought about including a little bit more than just your articles?

    I mean, what you say is important and everything. However imagine if
    you added some great photos or videos to give your
    posts more, “pop”! Your content is excellent but with
    images and clips, this site could certainly be one of the most beneficial in its niche.

    I really liked these muffins a lot, fluffy, moist but next time I’m adding a tad bit of salt. It was lacking that little flavor boost. Thank you for posting.

    I made these tonight and they are WONDERFUL! I added a cup of craisins that I had soaked to plump them, 1/4 c. Chia seeds, and a t. Of vanilla. Love that crumble topping too. Came out great and made the house smell divine! Oh, and all I had was sweetened applesauce, came out great!
